Cranberry Tea Bread

(An American recipe where they don’t restrict Cranberries to Christmas)

1 lb Plain Flour
8 oz. Sugar
4 tsp. Baking Powder
Lge pinch Salt
1 egg
12 oz. milk
3 tbs. melted butter
4oz. Cranberries (roughly chopped)
2 oz. mixed peel
2 oz. chopped walnuts

Mix the flour, sugar, baking powder and salt together.
Beat the egg and melted butter with the milk and add to the dry ingredients.
Stir together well then fold in the cranberries, chopped peel and walnuts.
Liberally grease two 1lb. loaf tins.
Pour in the mixture.
Preheat the oven to gas 4, 175 C, 350 F. and bake at this temperature for 50 mts. (test in the middle with a skewer to make sure it is done).
Let this cool and then serve buttered.
