Apple Date and Walnut Chutney

1 lb. Onions
3 lbs. Eating Apples
10 oz. Dates
4 oz. Walnuts
1 pt. White Wine Vinegar
1 tsp. Salt
1 tsp. Cayenne Pepper
10 oz. Sugar

Peel and chop the onions and put into a large pot with a cupful of water and bring to the boil.
Simmer for 10 mts or so until soft.
Peel and core the apples and chop roughly, add to the onions and continue simmering gently until they are soft.
Stone and chop the dates and add them with the chopped walnuts, the salt and cayenne pepper and half the vinegar to the pot.
Continue to simmer gently for a further 15 or 20 mts until the mixture thickens.
Now add the remaining vinegar and the sugar.
Continue to simmer until the mixture is so thick that a spoon drawn through leaves a definite path behind.
Pot and cover this in the usual way.
