Red Salsa

(Salsa Rossa para Navidad)

1 Red Onion
1 lb. Ripe Tomatoes
2 Red Peppers
1 Fresh Red Chilli
1 lb. Red Plums
Juice 1 Lime
2 Tbs. Honey
2 tbs Olive Oil
1 Bunch Fresh Coriander

Peel and finely slice the red Onion.
Quarter, de-seed and chop the tomatoes.
Halve the Peppers and the Chilli, discard the seeds and chop finely.
Cut the plums off the stone and chop the flesh.
Whisk together the Lime juice, Honey and oil.
Mix all the ingredients together.
This is a mouth awaking Salsa to refresh on Stephens Day.
