1 Red Pepper
1 Yellow Pepper
1 Green Pepper
1 large Aubergine (halved and sliced)
2 med Courgettes (sliced)
Olive oil for cooking
A full recipe of Tomato Sauce.
Cut the peppers into strips and fry them in olive oil in a hot pan until cooked through. Take them out with a slotted spoon and in the same pan fry the sliced courgettes until browned and cooked through, put these with the peppers.
Add more oil to the pan and cooked the Aubergine slices until soft.
Put all the cooked vegetables with a full tomato sauce into a large pot or pan and cook gently together for 10 to 15 mts.
This can be eaten hot or at room temperature.
