Spiced Potatoes

6 Med/Large Potatoes
4 Tbs. Sunflower oil
2 Tsps.Turmeric
1 tsp. Cumin
1 tsp Paprika
Salt and Black Pepper

Peel the potatoes and cut them into 1in. cubes.
Put these on to boil in a pot of water.
Let them come to the boil and then simmer for two mts.
Drain these off the water.
Heat the oil in a large roasting tin.
Stir in the spices and the salt and pepper.
Toss the drained potatoes in the oil and spices on the heat and then put into a hot oven (200C, 400F, Gas 6).
These should be ready in 20 mts.
