Stir Fried Courgettes

1 lb Small Courgettes (Green or Yellow or a mixture of both)
1 tbs. Sunflower Oil
1 tbs. Balsamic Vinegar
1 tbs. Light Soy Sauce
2 tsps. Brown Sugar
Salt and Pepper.

Cut the courgettes into strips roughly the size of small thin chips.
Heat the oil in a large pan or Wok.
Stir and fry the Courgettes in this until browning at the edges.
Add in the vinegar, soy, sugar, salt and pepper.
Cook on a high heat until this becomes a glaze, which coats the courgettes.
(This should only take a few minutes, be careful not to over cook them).
Serve hot with grills or roasts.
