Potatoes En Papillote

2 lbs. Small New Potatoes
Sprig fresh Mint or Rosemary or Tarragon.
2 oz. Butter
Salt and Pepper
1 egg beaten

Wash and scrub the potatoes.
Cut out four large circles of greaseproof paper and paint the edges with the egg wash.
Divide the potatoes between the four circles and dot with the butter.
Sprinkle in the herbs and season with black pepper and some sea salt.
Fold over the paper and seal together to make air tight parcles.
Heat the oven to 200C, 400F, Gas 6.

Put the parcles on a baking tray and cook at that temperature for 30 mts.
Bring the parcles to the table and open them there – the smell is wonderful!
