Twice Baked Potatoes with Red Onion and Knockalara Cheese

(serves 4 as a main course or 8 as a vegetable dish)

Golden Wonders are the best potatoes to bake.

4 Large Golden Wonders
4 oz. Butter
2 Red Onions
2 oz. Pine Nuts
4 oz. Knockalara Sheep’s Cheese
Salt and Black Pepper

Pre heat the oven to Gas 6/200C/400F.
Scrub the potatoes all over but leave the skins intact.
Prick to stop the skins bursting and cook on a baking sheet for 1 hour or until soft in the middle but with crisp skins.
While they are baking peel and chop the red onion finely and sweat in a covered pot on very low heat until soft and melting.
When cooked take the potatoes out of the oven and then cut them in half along the length.
Then (with a teatowel in your hand to avoid burns) scoop out all the potato flesh, leaving the skins intact, and put into a bowl.
Mash it up with a fork, stir in the softened red onion and the butter in which it was cooked, and season liberally with salt and black pepper.
Spoon this mixture back into the potato skins.
Cut the Knockalara into little dice and put on top of the potatoes, finally sprinkle over the pine nuts.
Put these back into the oven at the same temperature and bake again for about 10 mins. until the cheese is brown at the edges.
Serve very hot with a salad or a crisp green vegetable.
