Celariac and Cheddar Soup

1 head Celariac peeled and roughly chopped
2 med Onions peeled and chopped
2oz. Butter
1 Lge Potato peeled and chopped
1 pt. stock
Salt and Black Pepper
4 oz. Mature CheddarPut the Celariac, Butter, Onion and Potato in a bowl and cover with microwaveable film.
Put on to full in a Microwave for 10 mts. or until soft.
Put into a pot with the stock and bring to the boil.
Liquidize and then taste and season.
Grate the cheese and stir a tablespoon into each dish as you serve.
