Tomato and Goats Cheese Tartlets

225g (8oz.) Puff Pastry
1 Med Onion
1 Tbs. Olive Oil
450g (1lb) Small Vine Tomatoes
225g (8 oz.) Goats Cheese

Roll out the pastry and cut it into 4 circles about 3″ diameter.
(About the size of a C. D. )
Set the oven to 200C, 400F, Gas 6.
Put the 4 circles on a baking tray and then cover them with another baking tray, (This is to stop them rising during cooking)
When the oven has reached its temp.put in the trays and cook them at this temperature until they are evenly browned.(This will take anywhere between 10 and 15 mts depending on your oven)
Put them on a rack to cool.
Slice the onion thinly and sweat in the oil until it begins to take some colour
Then increase the heat and stirring all the time let them brown a little.
Spread the onion on the 4 puff pastry bases.
Slice the tomatoes thinly and lay them on top of the onion,interleaving them as you go,season these with salt black pepper and a pinch of sugar.
Dice the cheese and scatter on top of the tomatoes.
Put the tartlets back into the oven at the same temperature and cook until the cheese starts to melt and brown.
Serve piping hot or warm with a salad.
