Tomato and Goat's Cheese Tartlets

8oz. Puff Pastry
1 Med Onion
1 Tbs. Olive Oil
Small bunch Basil
1lb. Vine Tomatoes
8 oz. Goats Cheese

Roll out the pastry and cut it into 4 circles about 3" diameter (about the size of a CD).
Set the oven to 200C, 400F, Gas 6.
Put the 4 circles on a baking tray and then cover them with another one (this is to stop them rising during cooking).
When the oven has reached its temperature put in the trays and cook them at this temperature until they are evenly browned (this will take anywhere between 7 and 15 mts depending on your oven).
Put them on a rack to cool.
Slice the onion thinly and sweat in the oil until soft.
Chop 4 or 5 of the Basil leaves and stir through the cooked onion.
Spread the onion on the 4 puff pastry bases.
Slice the tomatoes thinly and lay them on top of the onion.
Slice the cheese and put that on top of the tomatoes.
Put the tartlets back into the oven at the same temperature and cook until the cheese starts to melt and brown.
Serve hot with some black Olives and a sprig of the remaining Basil.
