Bay Baked New Potatoes

(for 4 to 6)
1kg (2 lbs) Little new Potatoes
4 tablespoons Coarse Sea Salt
8 to 10 Bay leaves
For this ideally you should have an oven proof iron casserole

But it can be cooked in a roasting tin sealed with tin foil.

Sprinkle the salt in an even layer on the bottom of the casserole.
Scatter the bayleaves on the salt.

Scrub and dry the potatoes (Don’t peel)
Put them on top of the bay leaves (They can be on a few different layers)
Put the lid on the casserole.

(If you are using a roasting tin line with tin foil, and seal the whole parcel with another layer of foil)

Set the oven to Gas 6, 200C, 400F

Cook at this temperature for roughly 45mts or until the potatoes are tender.

This is a delicious way of cooking potatoes as they come out of the oven dry and soft with a wonderful flavour of bay.
