Apple Celery and Walnut Salad

3 Eating Apples
½ Head Celery (about 6 sticks)
100g (3 oz.) broken Walnuts
Juice ½ Lemon
1 Tablespoon Honey
4 Tablespoons Mayonnaise
2 Tablespoons Fromage Frais

Don’t peel the apples but cut them into ½ ins. dice.
Mix the lemon juice and honey together and toss the apple in this to stop them browning.
Dice the celery and mix this and the walnuts with the apple.
Mix together the mayonnaise and the fromage frais.
(Or use all fromage frais sweetened with more honey to taste)
Mix this with the apple mixture.
Pack into boxes and chill before picnic.
