For perfect Bellinis you should have white peaches, these have a wonderful scent and flavour and you should use Italian Prosecco for the wine. Ordinary peaches and sparkling wine are good too.
Peel and stone three peaches, chop them roughly and put into a liquidizer
with two teaspoons of sugar. Liquidize thoroughly and then push through a sieve into a large jug.
Add a bottle of thoroughly chilled sparkling wine to the jug and stir together gently (you donít want to loose the bubbles)
Pour into champagne glasses and try to drink slowly.
