Celeriac and Coriander Soup.

1 head of Celeriac
1 lge. Onion
60g (2 oz.) Butter
2 med. Potatoes
Small bunch of Fresh Herb Coriander
500ml (1 pt) Stock

(If you can’t find Celeriac use a head of celery instead)
Peel the Celeriac, potatoes and onions and cut them into -roughly-1inch cubes.
This soup can be made successfully in a microwave. Put all the diced vegetables into a bowl with the butter, coriander,.(Be careful with the amount of coriander as it has a very pungent celery like flavour)
Cover the bowl with cling film, set the microwave to full and cook for 15 mts. or until the vegetables are soft.
Put a pint of water into this and then liquidise (if you have a hand held liquidiser you only dirty one bowl)
Put the bowl of soup back into the microwave and heat at full for 4 mts.until it bubbles.Taste for seasoning and serve.
This soup can also be made in the traditional way by sweating the vegetables until cooked and then adding the water, liquidising, and bringing back to the boil in a pot.
