Orange Madeira Cake

175g (6 oz.) Caster Sugar
175g (6oz.) Butter
3 large Eggs
225g (8oz) Self Raising Flour
Grated zest and rind of Orange

Get the butter to room temperature (or soften for a few moments at defrost in the microwave.
Mix in the sugar and beat together until pale and thick.

Beat the eggs together and add them gradually to this mixture.

Fold in the flour
Stir in the orange

Butter and line a 1 kg Loaf tin or round tin with non-stick paper.

Pour in the mixture
And cook at: Gas 3, 160 C, 325F (145C in a fan oven) for 45 mts.
(or until a skewer comes out clean)
