Mackerel in Pinhead Oatmeal Mustard and Lemon.

(for 4)

2 Large Mackerel filleted.
1 egg
Pinhead oatmeal
Sunflower oil for cooking

1 lemon
1 Teaspoon Mustard
3 Tablespoons Sunflower Oil
1 teaspoon Sugar
Salt and Pepper.

You will have four Mackerel Fillets.
Mix the lemon juice, mustard, sugar and seasonings well together and beat in the oil to make the sauce.

Carefully, with a tweezers or a small pliers,pick the bones out of the fillets.
Beat the egg and dip the fillets in this, lay some oatmeal out on a large plate and then press each fillet into this to coat.

Put some sunflower oil in a large pan and when hot cook the fish in the hot oil flesh side first for about four minutes until browned, then cook on the skinside until cooked through.

Serve these with the sauce on the side with some plain boiled or baked potatoes.
