Swede Turnip with Bacon and Shallot

The Rolls Royce of Turnip Recipes.

(Rather than heat the oven especially these are most economically done when cooking a roast of meat)

1 medium Turnip
6 Shallots (or 1 large onion)
5 Rashers of streaky bacon
2 tablespoons Olive oil

Peel the turnip and cut into ½ inch cubes.

Cover these with water in a pot and cook until just nearly tender but still firm.

Chop the rashers and cook in the olive oil in a hot pan until crisp.

Take these from the pan but keep the fat.
Peel and slice the shallots and cook these gently in the same pan until soft.
Add these to the bacon and put to one side.

Drain the fat on the pan into a roasting dish and Pour in the turnips.
Toss in the oil (add a little more if necessary) and cook in a hot oven (200C. 400F Gas 6 ) for about 20 minutes until crisp on the outside.
Sprinkle over the rasher and shallot for the last five minutes of cooking.

These are the very Rolls Royce of turnips and well worth the trouble.
