A couple of days ago Josf, our neighbour who has an allotment, gave us a present of this huge chunk of pumpkin (it weighed in a 4.5 kilos). Three days later, while I was still looking at it my fellow blogger Caroline at Bibliocook (www.bibliocook.com) put out a recipe for a Spiced Pumpkin Soup. Heartened I told her I was going to give it a try. She suggested that I should make some Spiced Pumpkin Muffins with Cream Cheese Topping with the remainder (a recipe she had put up in her blog about a week ago. Nothing ventured…………

First job was to cube all the pumpkin, peel it and roast it in a hot oven for 40 mts.

The soup, spiced with cumin, turmeric, coriander and garam masala was a real winner

The Muffins were also excellent, (this time spiced with cinnamon, ginger, cloves and nutmeg (in France known as Quatre Epices)

And they were even better iced, (although I did have a bit left over)
Thanks Caroline. Both recipes are on her site.

on November 4, 2012Glad that you found the recipes so useful! Love spices with my roasted pumpkin.
If that was one of the slices, I wonder how big the entire pumpkin was?
