Cake aux Olives

Tipped off by Twitter mate Trish Deseine (Alan Bennet isn’t the only one who can drop names) I ordered in Caroline Conran’s “Sud de France”-The food and cooking of the Languedoc.
It is a little treasure house.
I was intrigued to discover the they also cook Soda Bread here in the Languedoc.

Mind you, once you have added in the eggs and the olive oil it has become an exotic Mediterranean cousin of our Soda Cake, even if it does share the same name.

Try it, it is delicious.
