Milord Blaa
Commissioned by Waterford Today to do something with the newly EU ennobled Blaa for their Christmas supplement I was faced with a problem-
There aint no Blaas in France.
It is ironic really because where there is some dispute about the origin of the name of Waterford’s iconic bread bun all agree that it originated in France and was brought over to Waterford by the Huguenots. (The dispute is whether Blaa came from the French word for white; Blanc or wheat ; Blé)
But still the nearest I could get to the Waterford Blaa in the Languedoc was a hamburger bun- a pappy revolting excuse for bread with an alarming ability to stay eternally “fresh”.
My friend Olivia in Waterford Today however came to the rescue and headed down the road to Harneys to buy some and send them out to me. She said to the lady in the bakery “Make them good ones, they are being sent out to France”- “Sure isn’t that where they came from anyway” was the extremely unphased Waterford reply.
Yesterday morning I heard a bit of a struggle at the letterbox in Thezan and just managed to stop our post lady pushing a parcel of four blaas through the letterbox .
Yesterday’s lunch in Le Presbytere was various variations on a Christmas Blaa Breakfast until we hit on the formula pictured- and no I am not going to tell you what I did until it has been publisher in the Christmas Supplement. (It is a little more complex than it appears.)
