225g (8oz.) Self raising flour
½ Teaspoon Ground Cinnamon
100g (4 oz.) Butter
450g (1 lb.) Cooking Apples
110g (4 oz.) Caster Sugar
1 Egg
100g (4 oz.) Grated Mature Cheddar.
You will need an 20cm (8in) cake tin
Mix the cinnamon with the flour and then cut the butter into cubes and either rub into the flour by hand until it is like crumbs or whizz these together to the same effect in a food processor.
Peel, core and coarsly grate the apples.
Mix these with the sugar and then stir into the flour and butter.
Beat the egg and mix this with the apple and flour mixture to form a rough dough.
Line the cake tin with tinfoil, butter this and then put in the dough, press this evenly into the base of the tin.
Heat the oven to 180C, 350F, Gas 4
Put the cake in the oven and cook for 45 minutes until firm to the touch.
Take out of the oven and sprinkle ofer the cheese, now return to to the oven for a minute or two until melted.
Let it cool a little before serving.
