Chilled Melon and Ginger Soup

1 well flavoured Melon [Ogen, Charantaise or Gallia] 275 ml (½ pt.) Apple Juice
2 Tablespoons Honey
Juice of 1 Lemon and 1 Orange
1 Thumb of Root Ginger
1 Plain Yoghurt
A fresh sprig of Mint

Peel the Melon, cut open and discard the seeds.
Cut into rough chunks.
Peel the Ginger and grate on the fine blade of the grater.
Put the Melon, Apple juice, Ginger, Honey and juices into a blender and blend until smooth.
Chill well and serve with a spoon of yoghurt and a leaf of Mint.
