Gooseberries often come into their best in Ireland after the Elderflowers so its handy to use the Gooseberry syrup for this.
If you have good elderflowers available at the same time as the fruit just put 12 heads in a muslin bag, toss into the gooseberries while boiling and leave them cool with the jam before removing.
1kg (2 ¼ lbs.) Gooseberries
150ml (4 fl. oz.) Water
1kg (2 ¼ lbs.) Sure Set Sugar
150ml (4 fl. oz.) Elderflower Syrup
Top and tail the gooseberries and put them in a large pot with the water.
Bring to the boil and simmer gently until they are tender. (about 10 to 15 mts.)
Add in the syrup and the sugar and bring up to a full boil.
Boil strongly for exactly four minutes.
Cool and pot as usual.
