New Potato Salad with Cucumber and Mint

I kg (2 lbs.) New Potatoes
4 Tablespoons home made Mayonnaise
4 Tablespoons Fromage Frais
½ Cucumber Cut into little dice

1 handful Fresh Parsley
12 Chives
1 bunch Fresh Mint (12 leaves)

Wash the potatoes well and try to make sure the are all roughly the same size
(if not cut the larger ones in half or quarter)
Bring a pot of salted water to the boil and plunge in the potatoes when it is boiling.Let them boil for 15 to 20 mts. or when tender when pierced with a knife.
Drain the potatoes well when cooked and cut them into quarters.
Let them cool.
Mix together the fromage frais and the mayonnaise
Chop the herbs finely and add them to the dressing.
Stir in the finely diced cucumber.

This is a summery salad, the herbs add a good zest, the fromage frais lightens the mayonnaise and the cucumber adds bite.
