2 oz. Butter
1 Large Onion
1 8oz. Frozen Peas
2 Large Potatoes
1 pt. Vegetable stock (or water)
1 Handful Fresh Mint
Peel and slice the onions and potatoes.
Sweat these with the butter in a pot until soft (about 10 mins on direct heat or 5 mins at full in a microwave).
Add in the peas and the stock and bring to the boil.
Boil for 4 mins to cook the peas and then throw in most of the mint.
Take off the heat and liquidise.
Chop the remaining mint and scatter over the top before serving.
This is delicious hot and when well chilled is very refreshing on a hot day.
