Citrus and Honey Salad

(for 4)

I Pink Grapefruit
1Yellow Grapefruit
2 Large Oranges
2 Tablespoons Honey
2 Kiwi Fruit
1 Lemon

Using a very sharp knife you want to peel and then segment the Grapefruit and the Oranges.
This is so often done badly that I will give you exact instructions.

First slice the two ends off the fruit.
Put the fruit down on a plate (to catch any juice) on one of the cut ends
And slice the skin and the pith downwards from the fruit carefully.
Do this all around the fruit until it is peeled.
Now holding the fruit in one hand cut between the dividing membranes to release the segments cleanly from the fruit. Do all this over a bowl or a plate to retain all the juice, and finally, squeeze the left over membranes in your hand to extract as much juice as possible.
Peel the Kiwi and cut it into similar shaped pieces.
Squeeze the lemon and mix this juice with the other reserved juices and the honey. Stir these well together to dissolve the honey.
Put the segmented fruit into one large or individual bowls and pour over the honey juices. Taste, sometimes, if the fruits are bitter, you may need some extra honey. Remember this is a wake up for the mouth not a dessert.
