Camille’s Pizza

( Makes one 12 inch pizza enough for about 4)

(Camille Kingsolvers recipe from
Animal, Vegetable Miracle)

2 x 7g Sachets Bread yeast
175 ml ( 6 oz.) Warm water
2 Tablespoons Olive Oil
1 teaspoon Salt
150g (5 oz.) Strong White Flour
100g (4 oz.) Wholemeal Flour
100g (4 oz.) Sliced Onions
1 red pepper sliced
400g (14 oz.) Ripe Sliced Tomatoes
225g (8oz.) Mozzarella

First make the dough.
Dissolve the yeast in the warm water and mix the olive oil with this and the salt.
Mix the two flours together, add the yeast mixture, knead well together and leave in a warm place to rise for about one hour.
While this is rising cook the onions and peppers.
Fry these gently in a covered pan for about 15 minutes until they the onions are transparent and soft.
Then take off the lid and continue cooking until they brown a little and get glossy and sweet.

Roll the risen dough out into a 12inch circle and put it on a baking sheet.

Carefully lay out the onion mixture, then lay the sliced mozzarella on this and then spread over the sliced tomatoes.

Now you can sprinkle over a topping of your choice.
Camille suggests using chopped Oregano, or chopped mushrooms, olives or anchovies.
In Ireland we might try chopped crisp cooked rashers and maybe some farmhouse cheese.

Bake the Pizza in a hot oven 220C 425 F, Gas 7 for about 20 mts
